Copycat Cinnabon Cinnamon Rolls

Ingredients:

4 1/4 to 4 3/4 cups all-purpose flour
1 package active dry yeast
1 cup milk
1 cup mashed, cooked potato
1/3 cup butter
1/3 cup granulated sugar
1 tsp. salt
2 large eggs
1 cup packed brown sugar
4 tsp. ground cinnamon
1/3 cup butter, softened
2/3 cup heavy cream

Cream Cheese Icing:

3 oz. cream cheese, softened
2 Tbsp. butter, softened
1 tsp. vanilla
2 1/2 cups powdered sugar
Milk

Directions:

In the bowl of a stand mixer, stir together 1 1/2 cups of the flour and the yeast. In a medium saucepan, heat and stir the next five ingredients (through salt) just until warm (120°F to 130°F) and butter almost melts. Add milk mixture and eggs to the flour mixture. Beat on low 30 seconds, scraping bowl constantly. Beat on high 3 minutes. Mix in the remaining flour.

Knead dough in a stand mixer to make a moderately soft dough that is elastic (about 3 minutes). Shape the dough into a ball. Place in a lightly greased bowl, turning to grease the surface of the dough. Cover and let rise in a warm place until doubled in size (45 to 60 minutes).

Punch dough down. Turn out onto a lightly floured surface. Cover and let rest 10 minutes. Meanwhile, lightly grease a 15x10x1-inch baking pan. For filling, in a small bowl, stir together brown sugar and cinnamon.

Roll dough into an 18x12-inch rectangle. Spread with 1/3 cup butter and sprinkle with filling, leaving 1 inch unfilled along one of the long sides. Tightly roll up, starting from the filled long side, and seal the seam with fingertips. Cut into 12 slices; arrange in prepared baking pan. Cover and let rise in a warm place until nearly double in size (30 to 45 minutes).

Preheat oven to 375°F. Pour heavy cream evenly over the rolls. Place an extra-large foil-lined baking sheet on the rack under the baking pan. Bake 28 to 30 minutes or until browned. Cool in the pan on a wire rack for 10 minutes.

To prepare the Icing, in a small bowl, stir together powdered sugar, vanilla, and enough milk to reach a drizzling consistency. Drizzle or spread rolls with Cream Cheese Icing. Serve warm.

In a medium mixing bowl, beat cream cheese, butter, and vanilla with an electric mixer on medium speed until combined. Gradually beat in powdered sugar until smooth. Beat in milk, 1 teaspoon at a time, to reach spreading consistency.
