Total Time: 1 hr 5 mins
Servings: 6
Ingredients:
8 cloves garlic, minced, divided
1/4 cup minced onion
1 large egg
1 large egg yolk
1/3 cup half and half
3 tablespoons finely chopped fresh parsley
3/4 cup grated Parmesan cheese, divided
1 pound ground chicken
1 pound uncooked Italian chicken sausage, casings removed
1 1/4 teaspoons kosher salt
1/2 teaspoon pepper
1/2 cup Italian breadcrumbs
1/4 cup white wine
1 cup chicken broth
6 tablespoons cold butter, cut into cubes
1/4 teaspoon crushed red pepper
Directions:
Preheat the oven to 350 degrees F (180 degrees C). Lightly grease a loaf pan.
Combine 6 cloves of garlic, onion, egg, egg yolk, half and half, 2 tablespoons of parsley, and 1/4 cup of grated Parmesan in a bowl; mix until well combined. Add ground chicken, sausage, 1 teaspoon salt, and pepper; mix until combined. Fold in breadcrumbs until evenly mixed and form into a loaf shape.
Transfer the mixture into the prepared pan and sprinkle the top evenly with 1 1/2 tablespoons Parmesan cheese.
Bake in the preheated oven until the internal temperature reaches 165 degrees F (73 degrees C), 35 to 40 minutes. Let it rest while the sauce is prepared.
Meanwhile, heat 1 tablespoon olive oil in a small saucepan over medium-high heat. Add the remaining 2 cloves of garlic and cook until fragrant, about 1 minute. Pour in wine and broth and bring to a boil. Reduce the heat and simmer until reduced by about 3/4 (you should have about 1/3 cup remaining).
Turn off the heat and gradually whisk in the cubed butter. Stir in the remaining Parmesan cheese and parsley. Season with remaining salt and crushed red pepper flakes.
Slice the meatloaf and serve it drizzled with garlic butter sauce.
