Honey Cake

Ingredients:

1 cup white sugar
1 cup honey
½ cup vegetable oil
4 eggs
2 teaspoons grated orange zest
1 cup orange juice
2 ½ cups all-purpose flour
3 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon

Directions:

Step 1

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.

Step 2

Sift together the flour, baking powder, baking soda, salt, and cinnamon. Set aside.

Step 3

In a large bowl, combine sugar, honey, oil, eggs, and orange zest. Beat in the flour mixture alternately with the orange juice, mixing just until incorporated. Pour batter into the prepared pan.

Step 4

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

I saw the first patch of dandelions at the train station yesterday- hopefully the bees aren’t too far behind! :honeybee: Perhaps a cake like this will help welcome them and all the lovely things of spring :blossom:

Blessed Beltane! My family and I started our day with warm slices of honey cake straight from the oven! We enjoyed it outside on our porch, listening to the birds and watching a pair build a nest!

Thanks again for the recipe! It is lovely and light! We were out of oranges, so I skipped the zest, but it is still amazing! My kids said it is amazing and that I should make it all the time.
