Maine Spiced Cranberry Nut Bread

Ingredients:
2 cups all-purpose flour
1 teaspoon baking powder
1 cup granulated sugar
1 teaspoon baking soda
1 pinch salt
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/2 cup orange juice
2 tablespoons melted butter
4 tablespoons water
1 large egg
1 cup fresh cranberries, roughly chopped
1 cup hazelnuts, roughly chopped
confectioners’ sugar, for dusting
Directions:
Preheat the oven to 325 degrees F. Sift the flour, baking powder, granulated sugar, baking soda, salt, nutmeg, and ginger into a large mixing bowl.
Make a well in the center of the dry ingredients. Pour in the orange juice, melted butter, water, and egg.
Using a wooden spoon. beat the liquid mixture, gradually drawing in the flour from the outside edge.
Add the cranberries and nuts. Stir to mix completely.
Lightly grease a loaf pan about 9 X 5". Press a strip of parchment paper on the base and up the sides. Lightly grease the paper and flour the whole inside of the pan. Spread batter into the prepared pan.
Bake in a preheated oven for about 1 hour or until a skewer inserted into the center of the loaf comes out clean.
Let it sit in the pan for about 5 minutes. Then remove the bread and cool on a wire rack.
Lightly dust with confectioners’ sugar, if desired. Cut into slices to serve.
Notes:
Every oven is different. Ours baked for 10 minutes longer.
