Since it’s cooled down a little the past few days, I decided to make Ribollita - Tuscan White Bean and Vegetable Soup

  • 3 cups cooked cannellini beans, plus ¼ cup cooking liquid, or two 15½-ounce cans cannellini beans, ¼ cup liquid reserved, then drained
  • 3 tablespoons extra-virgin olive oil, divided, plus more to serve
  • 4 ounces pancetta, chopped
  • 1 large leek, white and light green parts halved lengthwise, then sliced crosswise, rinsed and drained well
  • 2 medium carrots, peeled and halved lengthwise, sliced into 14-inch half-moons
  • 1 medium celery stalk, cut into 14-inch pieces
  • 2 medium garlic cloves, minced
  • ½ cup tomato paste
  • Two 4-inch thyme sprigs
  • Kosher salt and ground black pepper
