Bacon Chocolate Chip Cookies

Ingredients:

Bacon:

7 slices thick-cut bacon
1/2 cup lightly packed brown sugar

Cookie Dough:

2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
4 tablespoons bacon drippings, that have cooled and become solid
4 tablespoons softened margarine
1 stick softened butter
1/2 cup sugar
1 cup firmly packed brown sugar
2 large eggs
1 tablespoon vanilla extract
1 tablespoon apple cider vinegar
1 cup coarsely chopped pecans
3 cups dark chocolate chips

Directions:

Preheat oven to 350 degrees F. Put the brown sugar in a medium-sized bowl. Doing one strip at a time, put the bacon in the bowl and coat it with the brown sugar.

Place the bacon flat on a parchment paper-lined baking sheet. Repeat until all are done. Any leftover sugar can be sprinkled onto the bacon on the baking sheet.

Bake for about 12 minutes.

Turn each piece of bacon over and baste with the bacon grease.

Return to the oven and bake an additional 12 minutes or until the bacon is well-cooked and crisp (but not burnt).

Remove from the oven and set on a rack to cool. Do not throw away the bacon grease.

In a bowl, sift together the flour, baking soda, baking powder, and salt.

Break up or cut up the cooled bacon into small pieces the size of the chopped nuts and chocolate chips. Set aside.

In a large bowl, cream the bacon grease, margarine, butter, and sugars.

Add the eggs, vinegar, and vanilla extract.

Slowly add the flour mixture.

When the dough comes together, fold in the bacon, nuts, and chocolate chips.

Refrigerate dough in a covered bowl for a minimum of 3 hours or overnight.

Once the dough is chilled, preheat the oven to 350 degrees F. Line baking sheets with parchment paper. Drop 1 Tbsp of dough at a time onto the parchment paper.

Bake for 10 - 15 minutes (depending on your oven).

The cookies should be golden brown. Don’t remove them from the pan right away. Wait a couple of minutes, and then move cookies to a wire cooling rack. If you don’t have a wire cooling rack, place cookies on a wax paper-lined surface to cool completely.

Ooh! Or make a maple syrup icing to put on it! That would be good!

Maple syrup icing sounds amazing! And I agree, everything is better with bacon (and butter) :grin: have you tried bacon ketchup! Delicious! We have a burger place here in Southern California that has the most amazing bacon burger, and I don’t know how they do it, but the ketchup is to die for!

Sounds interesting! I’ve heard of bacon jam, but not bacon ketchup!
