Cook Time 1 hour hr
Total Time 1 hour hr 15 minutes mins
Servings 2 loaves

Ingredients:

3/4 cup butter, softened
1- 8 oz. pkg. cream cheese softened
1 1/2 cups granulated sugar
2 large eggs
2 cups all-purpose flour plus 2 tablespoons divided
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. vanilla extract
2 cups mashed bananas
1 3/4 cups fresh blueberries

Directions:

Preheat oven to 350°F and spray two 8x4 loaf pans with nonstick cooking spray.

Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating just until blended.

In a medium bowl, combine 2 cups of flour, baking powder, baking soda, and salt, and mix until combined.

Gradually add the dry mixture to the wet mixture, beating at low speed just until blended. Add in bananas and vanilla, and mix just until mixed.

In a small bowl, toss the blueberries with the remaining 2 tablespoons of flour until coated. Then gently fold into the batter. Spread batter into prepared loaf pans.

Bake for 1 hour or until a long wooden pick inserted in the center comes out clean. Cool bread in pans on wire racks for 10 minutes.

Notes:

You can use frozen blueberries; no need to thaw them first. And toss them with 1 tablespoon of all-purpose flour before adding them to the batter.

To freeze-cool the loaf completely and wrap it in plastic wrap, then a sheet of aluminum foil. Freeze for up to 3 months.

It doesn’t look too difficult to make, either. The biggest thing with quick breads is to not stir them too much. It makes them tough.

Oh, you’re welcome, dearest! My Daddy started me cooking young. I was like, six, and helping to prepare the Thanksgiving turkey. I was making my own spaghetti sauce when I was ten. I never ate Spaghetti O’s. That’s the one thing I hate about being disabled. I can’t get up and cook like I used to.

There’s a site you might like. It has tips and tutorials on how to do things. It’s called The Cookie Rookie.com Learn to Cook

I hope it can help you out on your journey into cooking! Good luck!
