Brie and Apple Mini Tarts with Thyme Caramel

Ingredients:

1 tablespoon butter
1/2 cup chopped onion
1 cup chopped, peeled apple
2 teaspoons balsamic vinegar
1 (1.9-ounce) package baked miniature phyllo tart shells (15 shells)
3 ounces Brie cheese, or as needed, rind removed
2 tablespoons chopped walnuts
2 tablespoons high-quality caramel sauce, such as Mrs. Richardson’s®
1 teaspoon fresh thyme leaves
flaky sea salt, for garnish

Directions:

Preheat the oven to 400 degrees F (200 degrees C). Line a 10x15-inch rimmed baking sheet with parchment paper.

Melt butter in a skillet over medium heat. Add onion and cook, stirring often, until golden brown and tender, about 10 minutes. Add apple and cook, stirring occasionally, until just beginning to soften, about 4 minutes. Stir in vinegar and cook 30 seconds more.

Arrange tart shells on the prepared baking sheet. Cut Brie into 15 small pieces and put one piece into each shell. Evenly fill with the apple mixture. Sprinkle with walnuts.

Bake in the preheated oven until cheese is melted and tart shells are golden, 12 to 15 minutes.

Meanwhile, stir together caramel sauce and thyme in a small bowl. Microwave until warmed, about 15 seconds. Drizzle tarts with caramel mixture and garnish with flaky salt.

Sweet Caramel-Apple Mini Tarts:

Preheat the oven to 400 degrees F (200 degrees C). Line a 10x15-inch rimmed baking sheet with parchment paper. Melt 1 tablespoon butter in a medium skillet over medium heat. Add 1 cup chopped apple and cook, stirring occasionally, until just beginning to soften, about 4 minutes. Add 1 tablespoon packed brown sugar and 1⁄2 teaspoon apple pie spice; cook 1 minute more.

Arrange 15 baked miniature phyllo tart shells (1.9-ounce packages) on a prepared baking sheet. Cut 2 ounces of cream cheese into 15 cubes. Place 1 piece of cream cheese into each tart shell. Evenly fill with the apple mixture. Sprinkle with 2 tablespoons chopped pecans. Bake until cream cheese is melted and shells are golden, 12 to 15 minutes. Drizzle tarts with 2 tablespoons warmed high-quality caramel sauce. Garnish with flaky salt.
