Chewy Rum Sugar Cookies
Prep time: 30 Min
Cook time: 10 Min
Yield: Makes 2 doz.
Ingredients:
2 3/4 cups all-purpose flour
1 1/4 teaspoons baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 large egg
1 1/2 teaspoons rum extract
Directions:
Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
In a small bowl, mix all dry ingredients, except sugar. Set aside.
Using a mixer, beat together the butter and sugar until smooth and very fluffy.
Beat in egg and rum extract.
Gradually blend in the rest of the dry ingredients. Make sure you are mixing thoroughly.
Roll rounded teaspoonfuls of dough into balls and roll in colored sugar. Place on lined cookie sheets about 1 1/2 inches apart.
Bake for 8 to 10 minutes in the preheated oven, or until lightly browned.

I was going to say the same thing! I don’t know what my problem is lately, but I’ve been CRAVING chewy things! The problem is that I’ve been craving chewy sweet things (specifically Starburst!), but I’m trying to cut back on sugar, so I’ve been chewing lots of gum! haha

Well you can always make these with Splenda or agave. Something like that! Because I have some chewy sugar cookies and a chewy gingerbread cookie recipe to share!

@Amethyst - I’ve been meaning to tell you that I finally made these cookies and they are delicious! 
I had to go shopping for the rum extract, but then everything else was an easy set-up:
What I really liked was that I could use my mixer with this recipe. It’s a pretty stiff dough, and working it by hand is just the kind of activity that puts torque on the lumbar region and aggravates the spinal stenosis - but the mixer made it easy.
The rum extract smelled fantastic. I added a little extra to make sure the flavor came through.
Rolled the dough in little balls and then in the little piles of colored sugar. It was easy to coat them and pop them on the baking sheet.
I think the recipe promises about 2 dozen cookies - I got twice that amount. Well worth the effort, and we had cookies for days. Gave some to my mom and my niece, and they’re a big hit.
