Christmas Morning Pancakes

Ingredients:

3 cups all-purpose flour
3 tablespoons granulated sugar
3 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
3 cups eggnog (or buttermilk, if desired)
1/2 cup milk
3 eggs
⅓ cup butter, melted
2 tbsp – 1/3 c sprinkles (plus more for topping)
Maple syrup and whipped cream
Butter for griddle/frying pancakes

Directions:

In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.

In a separate bowl or pitcher, mix the eggnog and milk. Pour it into the bowl and then add the eggs, followed by the melted butter.

Fold in the sprinkles.

Heat a griddle to medium heat and add 1 tbsp butter.

Pour or scoop the batter onto the preheated griddle, using approximately 1/2 cup for each pancake.

Cook until bubbles appear on the surface, 1 to 2 minutes; flip with a spatula and cook until golden on the other side. Repeat with the remaining batter.

Serve with maple syrup, sprinkles, and whipped cream.
