Confetti Cookie Ball
Yields: 10-12 servings

Ingredients:
1 and 1/2 (8-oz.) pkg. cream cheese softened
4 tbsp. (1/2 stick) butter softened
1/2 c. (60 g.) confectioners’ sugar
1/4 c. (55 g.) packed brown sugar
1/2 tsp. pure vanilla extract
1 c. mini chocolate chips
3/4 c. assorted rainbow and silver sprinkles
Nilla wafers and pretzels, for serving
Directions:
In a large bowl, using a handheld mixer on medium speed, beat cream cheese and butter until light and fluffy. Beat in confectioners’ sugar, brown sugar, and vanilla, then fold in chips.
Place 2 overlapping sheets of plastic wrap on a work surface and scrape cream cheese mixture on top. Using your hands, form the mixture into a ball. Place in a small bowl, then tightly cover with plastic wrap. Freeze until firm, about 3 hours. (Once it’s semi-firm, after about 2 hours, you’ll be able to better shape it into a ball.)
In a small bowl, mix rainbow and silver sprinkles.
When ready to serve, transfer the ball to a platter. Cover with sprinkles. (If your ball is firm enough to roll, try that.)
Serve with Nilla wafers and pretzels alongside.
