Cookies with oats, brown sugar, orange and walnuts

Materials
2 eggs
1 cup brown sugar
zest and juice of 1 orange
1 cup olive oil
1 cup of flour
1½ cups rolled oats
1 bag of baking powder
3/4 cup chopped walnuts
3/4 cup black Corinthian raisins

Procedure

Preheat the oven to 190 degrees and line two trays with baking paper. Beat the eggs with the sugar in a bowl with a whisk. Add the oil, zest and juice of the orange and continue beating.

Put the flour with the baking powder and oats in a separate bowl. Pour them into the egg mixture, mixing with a spatula until they are incorporated into the mixture. Finally, add the walnuts and raisins and mix one last time.

Lightly grease 2 baking trays or line them with baking paper. Divide the mixture with a teaspoon, leaving enough space between them because they will spread out quite a bit during baking. Bake them in the preheated oven for about 20 minutes. Take them out of the oven and let them cool before removing them from the paper because they will fall apart.
