Creamy Fruit Salad

Ingredients:
2 cups strawberries, quartered-about 16oz
2 cups red grapes, cut in half
10 oz Blackberries
1 cup blueberries
20 oz Pineapple Tidbits Drained -Reserve 2 TBS of juice
15 oz Mandarin oranges drained
Mint leaves for garnish
Creamy Dressing
1 cup Plain Yogurt
1/3-1/2 cup honey, according to how sweet you like it
2 Tablespoons Pineapple Juice Reserved from the canned pineapple
1 TBSP Lemon Juice fresh
1 teaspoon Lemon Zest
1 Tablespoon Mint minced
Directions:
In a large mixing bowl, gently toss together the strawberries, grapes, blackberries, blueberries, pineapple, and oranges.
2 cups strawberries, 2 cups red grapes, 10 oz Blackberries, 1 cup blueberries, 20 oz Pineapple Tidbits, 15 oz Mandarian oranges.
In a separate bowl, whisk together the yogurt, honey, pineapple juice, lemon juice and zest, and minced mint. I recommend adding 1/3 cup of honey. If you like it sweeter, add up to a 1/2 cup.
Pour the sauce over the fruit and gently toss until all of the fruit is coated.
Cover and chill for 1 hour.
This is optional, but you can sprinkle a little extra mint on top right before serving
Mint leaves for garnish.
