Creamy Key Lime Pie Ice Pops

Yield: Serves 7 (serving size: 1 ice pop)
Ingredients:
- 3/4 cup water
- 2/3 cup granulated sugar
- 4 large lime peel strips
- 1 1/2 cups chopped ripe avocado (from 2 large avocados)
- 1/2 cup plain 2% reduced-fat Greek yogurt
- 1/2 cup bottled Key lime juice
- 2 teaspoons lime zest (from 1 lime)
- 1 teaspoon vanilla extract
- 1/4 cup coarse graham cracker crumbs
Directions:
Step 1
Bring 3/4 cup water, sugar, and lime peel strips to a boil in a small saucepan over medium. Reduce heat to medium-low, and cook, stirring constantly, until sugar dissolves, about 5 minutes. Remove from heat, and cool completely, about 30 minutes. Remove and discard lime peel strips.
Step 2
Process lime simple syrup, avocado, yogurt, Key lime juice, lime zest, and vanilla in a blender until smooth. Pour mixture evenly into 7 ice-pop molds. Sprinkle evenly with graham cracker crumbs, pushing some crumbs down slightly into the lime mixture. Freeze for 30 minutes.
Step 3
Insert 1 craft stick into each pop. Freeze 3 hours before serving.
