Creamy Key Lime Pie Ice Pops 🥑

Creamy Key Lime Pie Ice Pops :avocado:

Ingredients:

  • 3/4 cup water
  • 2/3 cup granulated sugar
  • 4 large lime peel strips
  • 1 1/2 cups chopped ripe avocado (from 2 large avocados)
  • 1/2 cup plain 2% reduced-fat Greek yogurt
  • 1/2 cup bottled Key lime juice
  • 2 teaspoons lime zest (from 1 lime)
  • 1 teaspoon vanilla extract
  • 1/4 cup coarse graham cracker crumbs

Directions:

Step 1

Bring 3/4 cup water, sugar, and lime peel strips to a boil in a small saucepan over medium. Reduce heat to medium-low, and cook, stirring constantly, until sugar dissolves, about 5 minutes. Remove from heat, and cool completely, about 30 minutes. Remove and discard lime peel strips.
Step 2

Process lime simple syrup, avocado, yogurt, Key lime juice, lime zest, and vanilla in a blender until smooth. Pour mixture evenly into 7 ice-pop molds. Sprinkle evenly with graham cracker crumbs, pushing some crumbs down slightly into the lime mixture. Freeze for 30 minutes.
Step 3

Insert 1 craft stick into each pop. Freeze 3 hours before serving.

You had me interested at “Creamy Key Lime Pie Ice Pops” but the real hook was why there was an avocado emoji in the title too :avocado: :joy:

I never would have thought to add avocado to key lime- but I bet it makes the texture exquisite! I imagine it’s kind of like how zucchini makes a perfect base for chocolate cake :yum:.
