Easy Lemon Cookie Bars

Ingredients:
3 2/3 cups Bisquick™ Original Pancake & Baking Mix
1 cup granulated sugar
1 cup butter, softened
2 teaspoons grated lemon zest
2 eggs
Frosting:
1 cup butter, softened
4 cups powdered sugar
2 teaspoons grated lemon zest
2 tablespoons fresh lemon juice
1/8 teaspoon salt
Directions:
Heat oven to 350°F. Spray a 13 × 9-inch pan with cooking spray.
In a large bowl, mix the Bar ingredients with a spoon until a soft dough forms. Press evenly into the pan.
Bake 21 to 25 minutes or until golden brown. Cool completely, about 1 hour.
In a medium bowl, beat 1 cup butter and 2 cups of the powdered sugar with an electric mixer on low speed until blended. Beat in 2 teaspoons lemon zest, the lemon juice, and salt. Gradually beat in remaining powdered sugar until well blended. If necessary, beat in additional lemon juice or water, 1 teaspoon at a time, until frosting is of desired spreading consistency.
Spread frosting over bars. Cut into 6 rows by 4 rows. Store tightly covered at room temperature.
