Eggnog Truffles

Directions:
1 large egg yolk
1/2 cup heavy whipping cream
3/4 tsp. finely grated orange zest
1 tsp. cinnamon extract or 2 tsp. ground cinnamon
1/4 tsp. pure vanilla extract
1 tsp. grated fresh nutmeg, divided
1 lb. white chocolate chips
1/2 cup (60 g.) powdered sugar
1/2 tsp. ground cinnamon
Directions:
In a medium heatproof bowl, combine egg yolk, cream, orange zest, cinnamon extract, vanilla, and 1/2 teaspoon nutmeg. Place the bowl over a medium pot of barely simmering water over medium-high heat (do not let water touch the bottom of the bowl). Continuously whisk until mixture begins to thicken slightly, 2 to 3 minutes.
Add chocolate and stir until melted. Remove from heat and pour into a large shallow vessel. Refrigerate until chilled and firm, 1 to 2 hours.
In a shallow bowl, whisk powdered sugar, ground cinnamon, and the remaining 1/2 teaspoon nutmeg to combine.
Scoop about 2 tablespoons of cream mixture, roll into a ball with your hands, and toss in the powdered sugar mixture. Arrange on a parchment-lined sheet tray and refrigerate until ready to serve.
