Cranberry Butter

Yields: 1 cup
Ingredients:
1 cup cranberries
1 cup orange juice
1 cup unsalted butter, softened
½ cup powdered sugar
⅛ teaspoon salt
Directions:
Place the cranberries and orange juice in a small or medium-sized saucepan over medium heat. Bring to a gentle boil for 10 minutes.
Drain the cranberries and set them aside to cool.
Place the softened butter, powdered sugar, and salt in a large mixing bowl. Beat the ingredients together with an electric mixer until creamy.
Stir the cranberries in with the butter to combine.
Serve immediately or cover and refrigerate until ready to serve.
Notes:
Use good-quality butter. I recommend using a good-quality butter for the best flavor.

You can adjust the sweetness. If you prefer your butter less sweet, you can reduce the powdered sugar to 1/4 cup. If you want it really sweet, you can add a little extra powdered sugar.

Garlic and Herb Compound Butter
Prep Time: 10 Min
Serves: 8-10
Ingredients:
2 sticks salted butter, room temperature
3 cloves of garlic, minced
3 Tbsp chopped fresh parsley
1 Tbsp chopped fresh rosemary
1 Tbsp chopped fresh thyme
1 tsp chopped fresh sage
1 Tbsp lemon juice, fresh
Directions:
Chop herbs. Mince the garlic. Squeeze lemon juice.
In a medium bowl, with a spoon, mix the butter, herbs, garlic, and lemon.
On a piece of parchment paper, form the butter into a log shape.
Roll up the parchment paper to help shape the log.
Cut off the excess parchment paper and place butter in a resealable bag.
Refrigerate for at least 2 hours before serving.

Easy Honey Butter
Total Time: 5 minutes
Servings: 1 cup butter
Ingredients:
1 cup salted butter, softened
3 tablespoons honey
Sea salt, if desired
Directions:
Place the butter in the bowl of a stand mixer. Beat for one minute or until the butter is smooth and creamy. Scrape down the sides of the bowl with a spatula. Add in the honey and beat again until combined. Taste, add a little sea salt if the butter isn’t salty enough for you.
Place the butter in a jar or container. The butter will keep in the refrigerator for up to 2 weeks. Bring to room temperature before serving. I like to drizzle a little extra honey on top before serving.
Notes:
If you don’t have a stand mixer, you can use a hand mixer. If you use unsalted butter, make sure you salt the butter with sea salt. The salt is a must!
