Garlic Mushroom Cauliflower Skillet

A few days ago I came across a recipe that looked interesting, so I’m going to try it tonight.
(Eat Well 101)

Ingredients:

  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1/2 onion, chopped
  • 1/2 head cauliflower cut into florets
  • 1 pound mushrooms, cleaned
  • 2 tablespoons low sodium vegetable stock
  • 1 teaspoon fresh thyme leaves, chopped
  • 2 tablespoons fresh parsley, chopped
  • 4 cloves garlic, minced
  • Salt and pepper, to taste

DIRECTIONS

1.To make the sautéed cauliflower and mushrooms. Heat the butter and oil in a large pan or skillet over medium-high heat. Sauté the onion until softened (about 3 minutes).

  1. Add the mushrooms and cook for about 4-5 minutes on all sides. Make sure the mushrooms render as much moisture as possible. Brown them a little more if necessary, to avoid the side dish becoming soggy at the end. Keep an eye on it so they don’t burn either.

  2. Once mushrooms are well browned, add cauliflower florets. Cook until golden and crispy on the edges, about 8-10 minutes. Veggies must be well browned.

  3. Pour in the vegetable stock and cook for 2 minutes, to reduce the sauce slightly.

  4. Add thyme, 1 tablespoon of parsley, and garlic. Cook the mushrooms and cauliflower for half a minute, until fragrant. Season generously with salt and pepper, to taste, sprinkle with remaining parsley, and serve the garlic butter mushrooms and cauliflower skillet immediately. :garlic: :mushroom:

I cut my thumb when I was cutting the cauliflower in half. Me “Baby I need a band aid” him “what happened” me “I cut my thumb” him “how big of a band aid do you need” me “it’s my thumb”. I am standing there with my hand over my head so I don’t bleed on the food, and he’s asking questions? Get me a damn band aid. Lol!

Your partner sounds like me. :joy: A million things I need to know.

To be fair, I have like 20 different sizes and shapes of bandaid, different sizes of gauze, bandages, and everything in beween. And my partner is likely to have anything from a tiny hangnail bleeding all over to a giant slash from being clumsy or performing self-surgery. Then there are all the different types of things I have to rub on it, from creams to liquids. I need to know what I’m dealing with here! :joy:

But what usually happens is that I decide what it needs when I see it. And then send them to clean up the mess they’ve left on the floor because they always notice the bleeding too late. :grin:

Men are so funny. I husband has an assortment of bandages too. I just need a band aid. Lol!

I am working from home today, so I won’t need my thumb to button buttons. Pajama pants and t shirt today!
