Gluten Free Blackberry Cobbler

This looks so yummy and I love that it uses 1 to 1 four. I haven’t been able to successfully use Xanthan Gum without the horrible taste . I was thinking of substituting blueberries but I couldn’t get to my mother-in-law’s in time for picking. I might use store bought frozen, I think that might eliminate any water content difference as those to be higher in water content. I found that out with muffins once

Usually I would go for the fresh fruit, but I think you might be right about the water content. I love the 1-1 gf flour. Game changer! :snowflake:

The blackberries are just about ripe in the garden here- I tried the first one and whew it was sour! :stuck_out_tongue_closed_eyes:

Once they sweeten up a blackberry cobbler sounds amazing- I bet it would be delicious with blueberries too! :yum:
