Gluten-Free Salted Caramel Chocolate Chip Bars

Ingredients:
1 cup butter, softened
1 ½ cup packed brown sugar
1 teaspoon baking soda
1 teaspoon kosher salt
2 eggs
1 tablespoon gluten-free vanilla
2 ¾ cup Gluten-Free Flour Mix*
1 12-ounce pkg. milk chocolate-covered round caramels, such as Rolo*, coarsely chopped
½ cup miniature semisweet chocolate chips
Gluten-Free Flour Mix:
3 cups white rice flour
3 cup potato starch
2 cup sorghum flour
4 teaspoons xanthan gum
Directions:
Preheat oven to 350°F. Line a 9-inch square baking pan with parchment paper, extending the paper over the edges.
In a large bowl beat butter with a mixer on medium for 30 seconds. Add brown sugar, baking soda, and salt. Beat on medium to high for 1 to 2 minutes or until light and fluffy, scraping the bowl as needed. Beat in eggs and vanilla. Beat in Gluten-Free Flour Mix. Stir in chopped caramels and chocolate chips. Spread dough in prepared baking pan.
Bake for 30 to 40 minutes or until golden. Cool in the pan on a wire rack. Use parchment paper to lift bars from the pan. Cut into bars.
Gluten-Free Flour Mix:
In a large airtight container whisk together rice flour, potato starch, sorghum flour, and xanthan gum. Cover and store at room temperature for up to 3 months.
Notes:
Regular-size Rolo candies are gluten-free, but the miniature candies are not. Always check labels to be certain.
