Imbolc dutch pancake recipe

  • 2 eggs
  • 250g flour
  • 500ml (almond/oat)milk
  1. Heat a (non stick pan) with a bit of olive oil or butter.
  2. Mix all the ingredients, sift the flour to prevent getting lumps in the batter.
  3. Pour with a ladle spoon (half filled) the batter into the pan and rotate it a bit to get a nice round pancake.
  4. Let it cook :woman_cook:, you know the pancake is ready to flip when you see no wet batter/bubbles/sides are getting brown.
  5. Flip the pancake, and let the other side cook.
  6. I recommend stacking the pancakes on a plate with a pan lid, the warmth from the pancakes paired with their steam will make the stack of pancakes nice and soft.
  7. Serve with powdered sugar, fresh fruit, maple syrup/ topping of choice!
