Mackinac Island Pecan Fudge

Mackinac Island Pecan Fudge

Yield: 10 – 12 servings

Ingredients:

1/2 cup unsalted butter
1/2 cup milk
1/2 cup granulated white sugar
1/2 cup brown sugar, firmly packed
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
2 cups powdered sugar
1/2 cup pecans, roughly chopped

Directions:

Combine butter, milk, salt, brown sugar, and white sugar in a heavy pan on medium heat. Mix to combine and bring to a boil, and stir continuously for 6 minutes.

Remove from heat and cool for 5 minutes, then add vanilla, cocoa powder, and powdered sugar. Beat with an electric mixer until the fudge is smooth and thick. Fold in pecans.

Grease a baking sheet with butter, then pour the mixture onto the sheet to cool.

When cool enough to handle, use a greased spatula to help roll the mixture into a wide log, wrap it in plastic wrap, and place it in the fridge for 45 minutes before slicing.
