Simple Fairy Cakes 🧚

Simple Fairy Cakes :fairy:

Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients:

125g Self-raising flour
125g Butter
125g Caster Sugar
2 eggs
1/2 tsp vanilla extract

Directions:

Preheat the oven to gas mark 6 & line a 12-tin baking tray or muffin tin with paper cases, you can use cupcake cases if you have them, but they won’t be filled to the top.

Beat the sugar and butter until combined (I do this in an electric mixer but you could use an electric whisk and a large mixing bowl).

Add in the flour, egg, and vanilla extract, and mix well.

Spoon the cake mix evenly between the cases.

Bake in the oven for 12 – 15 minutes until golden brown.

Leave to cool, then transfer to a wire rack to cool completely.

(I looked it up and Gas Mark 6 on an oven is the same as 400 °F)

Love these. It was one of the first things I learned to make in Home Economics at high school. Still remember the recipe because it is the same amount of each ingredient. :woman_fairy: :birthday_cake:

Heh. I don’t remember learning anything other than biscuits and then pizza rolls in pre-made crescent roll dough. You had a much better teacher!
