Sloppy Joe Casserole

Ingredients:

For the Biscuit Topping
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons butter, melted
1 cup milk
1 egg
1 1/2 cups cheddar cheese, shredded
For the meat mixture
1.5 pounds ground beef
1 cup white onion,n diced
1 cup red bell pepper, diced
1 cup green bell pepper,r diced
2 tablespoons brown sugar
1 teaspoon salt
1/2 teaspoon red pepper flakes, optional
1 tablespoon Worcestershire sauce
2 teaspoons dry mustard
1 (15-ounce) can tomato sauce
1 cup ketchup

Directions:

  1. Preheat the oven to 400 degrees.

  2. In a large bowl, add the flour, baking powder, salt, milk, butter, and egg and whisk them together, then fold in the shredded cheese until combined. Set aside.

  3. Heat a large 12-inch oven-safe skillet on medium-high heat, add the ground beef, onion, and bell peppers, and cook until browned. Drain any extra fat.

  4. Add in the brown sugar, Worcestershire sauce, dry mustard, salt, red pepper flakes, tomato sauce, and ketchup. Simmer on low heat for 5 minutes.

  5. You can pour the meat mixture into a 9x13 baking dish if you don’t have an oven-safe skillet. Dollop the biscuit evenly over the top, spreading it out as best you can.

  6. Bake for 25-30 minutes or until golden brown and bubbly. Serve!

Notes:

If you don’t have an oven-safe skillet, you can pour the meat mixture into a casserole dish, then add the biscuits and bake.

If you have leftovers, transfer to an airtight container and store in the fridge for 3 to 4 days or the freezer for 2 months or so.

Reheat in the oven at 350 degrees. I recommend allowing frozen leftovers to thaw overnight before reheating.
You could also reheat individual portions in the microwave in a pinch.

A box of Cheddar Bay biscuit mix can be used as the topping.

I made this last night for the family and used my cast iron skillet for it. It was a big hit! This is sooooo good! Definitely will be making again!
