Slow-Cooker Ribs

Ingredients:
2 tsp. kosher salt
1 1/2 tsp. smoked paprika
1 tsp. black pepper
1 tsp. chili powder
1/2 tsp. garlic powder
1/4 tsp. cayenne pepper
1 (3-lb.) rack baby back pork ribs, cut in half crosswise
1/2 cup tap water
1 small (5 oz.) yellow onion, sliced 1/2-in. thick (about 3/4 cup)
1 1/2 cups barbecue sauce (such as Stubb’s), divided
Directions:
Gather all ingredients.
Stir together salt, smoked paprika, black pepper, chili powder, garlic powder, and cayenne pepper in a small bowl until combined.
Sprinkle spice mixture on both sides of ribs, gently patting to coat.
Pour water into a 6-quart slow cooker; scatter onion evenly in the bottom.
Place ribs, meat side up, over onions. Brush 1/2 cup barbecue sauce over the tops of ribs.
Cover and cook until meat is tender but not falling off the bone, 4 hours on HIGH or 8 hours on LOW.
Transfer ribs to a cutting board and let rest for 5 minutes. Brush ribs with 1/2 cup barbecue sauce.
Cut between bones and transfer to a platter. Serve with the remaining 1/2 cup barbecue sauce.

Do ribs in a slow cooker need liquid?
Yes, ribs cooked in a slow cooker do need a bit of liquid to keep them moist and tender. Adding around a half cup of liquid, such as broth, barbecue sauce, or a mix of vinegar and water, helps create a flavorful steam as the meat cooks.
