Texas Pecan Pralines

Ingredients:

5 tablespoons water
1 cup brown sugar
1 cup white sugar
1/2 stick butter, softened
1 cup pecans, halved
1 teaspoon vanilla extract

Directions:

Line a cupcake tin with paper liners and spray them with non-stick cooking spray, and set aside. Place the 5 Tbsp of water in a microwave-safe cup and heat for 1 minute on high.

Combine the boiling water, brown sugar, white sugar, and butter in a saucepan over high heat.

Boil mixture for 2 minutes or until it reaches 236 degrees or the soft ball stage.

Quickly remove the mixture from the heat. Add the pecans and vanilla.

Quickly stir the mixture for 15 to 30 seconds.

Immediately use a tablespoon to drop the pralines into the cupcake paper and cool.
