Vegan Valentine Truffles

Vegan Valentine Truffles

Ingredients:

5 tbsp full-fat canned coconut cream
1 cup vegan dark chocolate chips
1 cup almond flour
2 to 3 tbsp agave
Pinch salt
Mini sprinkles

Directions:

Heat the coconut cream in a small pot.

Once boiling, turn off the heat and add in the dark chocolate chips. Stir until melted.

In a large bowl, add the melted chocolate along with the flour, agave, and salt. Mix until combined.

Form tablespoon-sized truffle balls. This recipe yields between 14 to 16 balls

Refrigerate the truffles for 5 minutes. Roll them in your hands until smooth, then coat them with mini sprinkles.

Allow to set in the fridge for another 30 minutes before serving. Enjoy!

Notes:

Make sure to use full-fat canned coconut cream. Otherwise, your Valentine’s truffles won’t solidify.
You can also roll your truffles in crushed freeze-dried strawberries, chopped pistachios, or cocoa powder. For a more indulgent take, melt dairy-free chocolate chips with coconut oil and dunk the truffle balls in the melted chocolate. A drizzle of peanut butter over the chocolate-coated Valentine’s truffles will also be divine!
You can store your Valentine’s Day truffles in an airtight container in the fridge for up to 1 week—but let’s be honest, they won’t last that long.

Ingredient Substitutions:

Full Fat Canned Coconut Cream – There’s no substitute for full-fat coconut cream to ensure your Valentine truffles will solidify. And don’t worry, it won’t add any coconut flavor to the rich chocolate treats.

Vegan Dark Chocolate Chips - Make sure your chocolate chips are dairy-free! You can also save some to melt and coat the Valentine’s chocolate truffles.

Almond Flour – Binds and helps with the chocolate mixture’s consistency, so it won’t get too sticky.

Agave – You can also use vegan honey or any liquid sweetener you like. For flavored dark chocolate truffles, vanilla extract and orange extract will be amazing!

Salt – There’s just something about rich chocolate desserts with salt. You can also add instant espresso powder to bring out the chocolate flavor more or add spices like cinnamon and cayenne pepper.

Mini-Sprinkles – We opted for red sprinkles to make these chocolate ganache truffles Valentine’s Day ready!
