I went out on a limb this weekend and gave a new recipe a try- in honor of the summer solstice! I say “recipe” but I didn’t have any instructions, I let my ingreidents guide me… and this is the result!
Litha Offering Soup
(vegan and gluten-free!)
Ingredients used:
~Cold water purified with sea salt
~Vegetables (chopped): carrots, parsnips, celery root, sweet corn
~Herbs: rosemary, sweet basil
~Spices: ginger, turmeric, sweet paprika, black pepper, salt
-Rice noodles
I boiled the vegetables on the stove for a few hours to get a nice and hearty broth- the spices made the soup turn a lovely yellowish orange that fit the summer solstice theme very well! I added the rice noodles at the end and let everything cook for a few more minutes
.
Then I brought the soup over to my Litha altar and made an offering alongside dates and honey
and raspberry liquor
. All in all, I think it turned out well! Although I wish I added more water- the broth was the best part of the dish
I hope everyone had a blessed solstice!
I’m excited to see what new things everyone tries out this week- wishing you all the best of luck!
