Try making them sometime. It’s really easy, even for us non-cooks. They don’t even need filling. You can just use spreads when you eat them instead. :smile: (Like ajvar. I need a sticker like your Mulder quote about aliens, but the photo is of me saying ajvar instead. :laughing:)

I think I get too enthusiastic about cooking… Because I really like the eating part. :laughing:

I also enjoy making salmon with potatoes. :black_heart: Sweet are my favourite, but usually I just go plain white.

Whenever we get mince meat, there’s a chance we make burgers.

Whenever we get steak, there’s a chance I make tomato beef noodle soup. Takes hours of cooking the steaks to make the soup, but it’s one of my favourites.

I also made my first attempt at making bread from scratch for Lughnasadh, thanks to inspiration from this coven. I mean, I’ve been making bread adjacent things for years, like piroshki, but not an actual loaf. So this was fun.

It tasted nice, but I will definitely make it look better next time!

Let me in let me in. Our foods here seem more simple to make. lol. I feel like y’all are like chefs :laughing: yours looks so pretty. I think yeah I’m a cook but it’s all speed and repetitive. I’d like to expand my horizons in cooking maybe I’ll get back into yet when I don’t do it for a living. I typically don’t measure a lot I eye ball things half the time.i mean I make good food. But I want to try to start making new things. And stick to the healthier side when possible if I don’t won’t to splurge. My tummy has been bothering me off n on again. I was telling u bout all the tests I’ve had with no idea what it really is. Imma order a new probiotic prebiotic when I get paid Friday. So when I eat bad I pay for it. Kinda like ur partner minus the IBS. But I suspect a gluten allergy as it came back a possibility. It’s hard to cut out gluten it’s in everything

If it makes you feel any better, the only time I measure things is when it’s like… Cooking rice or something else where the water-to-substance ratio matters because of absorption. Everything else is like, however much I feel like at the time. :laughing:

There are a lot of gluten-free options available these days, but they’re all more expensive than the regular stuff. We’ve done a lot of exploring of those because of my partner’s IBS.

I have tried some gluten-free pasta options that are nice, but it’s so very hit or miss. Then there’s the more out-there gluten-free things. Konjac pasta, noodles, and rice have enough of their own flavour and texture profiles that you’d want to devise new recipes for them rather than copying whatever you normally do.

There are a bunch of noodle types that are naturally gluten-free as well. Buckwheat doesn’t actually have gluten, so if you can get soba without wheat added, it’s really nice and so easy to turn into a tasty noodle soup. You basically just need that trinity I told you about and water, bring those to boil while you cook the noodles separately, then rinse the noodles with cold water when cooked, and combine. There are also sweet potato noodles.

Rice noodles don’t have gluten, because all natural forms of rice, including white, brown, or wild, are gluten-free. So those or rice are great options. A small amount of meat and a bunch of vegetables over rice with whatever sauce mix I feel like on the day is a really easy and tasty meal, I find. Thinly sliced beef like that done for hot pot (image below) cooked in the trinity with water, then put over rice (like a gyuudon, image also below) with some fried broccoli. 10/10.

Usually, they add onion to actual gyuudon, but it’s one of the big no-nos of the low FODMAP diet. So that isn’t recommended for anyone with digestive issues.

But if you stick to healthy, that means less carb-loaded gluten stuff and more vegetables, anyway. :grin:

Today’s lunch was easy because I’ve been so busy with work today (recently in general, I guess).

Did a basil pesto fusilli with grated grana padano cheese. My partner grated the cheese finely, so it disintegrated into the pasta, and you can’t see it, but there’s actually a lot there. :smile:

Pesto is nice because it’s so quick and easy. It’s basically some herbs and nuts ground up, and olive oil, then put into a jar for later use. We have a couple of mortar and pestles now, but we also have a couple of electric herb grinders to make it easier. Just depends on how we feel like preparing things at the time.

Yep. The trinity being soy sauce, mirin or sugar, and sake or rice wine.

For Chinese dishes, that’d be soy sauce, sugar, and rice wine. For Japanese dishes, that would be soy sauce, mirin, and sake. But I use the latter version for everything. :woman_shrugging:

(Ok, the real reason I use the latter is because I don’t mind drinking or serving sake on its own. But I hate rice wine. :laughing:)

Oh! And never get cooking sake. They add a ton of salt to allow it to be cheap but also prevent people from using it as a drink. It’s pretty bad. You can get a big bottle of regular drinkable sake for under $10.

You can start off in equal amounts, as many recipes will say. If you’re unsure and cooking in small amounts, that can just be a few tablespoons. But then you should adjust to taste as you see the impact it has on each meal.

But… The problem is that soy sauce has gluten. :thinking: There are several gluten-free soy sauce options available that use rice instead of wheat, but you’d have to find them. Not sure how different they are in taste, but they might require adjusting the ratios.

Ive tried rice wine I don’t like it either. I’ll definitely check it out. It’s very helpful. It’d be nice to have some different options :slightly_smiling_face: :heart:

I went to culinary school! Can’t say I’m a great chef! I’d say a good cook! And great baker! I’m not into cooking or baking much anymore. Plus it’s hard for me to cook now. I did win some awards for chocolate sculptures I made. This was before digital cameras so I have no idea where pictures would be.
