I gave you a bread bowl last week. Here’s a soup to put in it!
Broccoli Cheddar Soup Recipe (Panera Copycat)
Prep Time: 5 minutes
Cook Time: 10 minutes
Coming to Pressure Time for Instant Pot: 5 minutes
Total Time: 20 minutes minutes
Servings: 4
Ingredients:
¼ cup butter or oil of choice
1 onion chopped
4 garlic cloves minced
4 cups broccoli florets fresh or frozen
4 cups vegetable stock or water
1 cup half and half or cream or milk
2 tablespoons tapioca starch
2 cups shredded cheddar cheese or any cheese of choice
2 teaspoons Dijon mustard
1 teaspoon hot sauce optional, but adds great flavor
½ teaspoon smoked paprika
¼ teaspoon black pepper
salt to taste
Directions:
Instant Pot Instructions
Set the Instant Pot to the saute function. Add the butter, onion and garlic. Saute for 5 minutes.
Add the broccoli and vegetable stock. Place the lid on and set to manual high pressure for 5 minutes.
When the 5 minutes are up, quickly release the pressure and remove the lid.
In a small bowl combine the half and half and the starch. Mix well. Pour this mixture into the Instant Pot. Mix well.
Slowly stir in the cheese, until the soup is smooth and creamy.
Add the mustard, hot sauce, paprika, and pepper. Mix well.
Salt to taste, then enjoy!
Stovetop Instructions
In a pot over medium heat, add the butter, onion and garlic. Saute for 5 minutes.
Add the broccoli and stock. Turn the heat to high to bring to a boil. Once boiling, place the lid on and turn the heat to medium-low. Simmer until the broccoli is tender, about 10 minutes.
Mix the half and half and starch in a small bowl. Pour the mixture into the pot, then stir well.
Slowly mix in the cheese until smooth and creamy.
Add the mustard, hot sauce, paprika, and pepper. Mix well.
Salt to taste before serving. Enjoy!
Cook’s Notes:
If you want a super smooth and creamy soup, you can use an immersion blender before serving.
