I know it makes the most sense to do this on the 1st day of every month but as I am just coming across this now, is it ok for me to do this now or should I actually wait until the 1st of next month?

Others may disagree, but I personally see the cinnamon ritual as welcoming abundance at the start of something new and that it could be used during any transitionary period. I’d say it could be cast during a new moon, the first day of a week, a new season, the new year, etc. As long as your intention is clear (ex. I’m inviting prosperity as this new season/week/month/year/etc begins) the spell should serve you well.
