I know this challenge is closed I live in Australia and have trouble converting and usually don’t get my emails until the day before the challenge closes for some reason but I would like to share one of my signature dishes

Oh no! That would certainly make it difficult to catch the challenge in time- apologies, Julie. May I ask which email you are checking for the challenges (the newsletter, general forum notifications, or bookmarks?). Usually, the email newsletter goes out three times a week. The forum notifications (including those for bookmarks) can be switched if they aren’t working for you- if you go into your forum profile, you’ll be able to adjust them (to receive more or fewer notifications).
Please let me know if you have trouble checking or changing your settings- I (or another Mod) will be happy to help!
Ohhhh lamb shanks- this sounds amazing! I also absolutely love your cook book- you’ve made it all your own! The handwritten notes, printed pictures as guides, and pretty decorations are all so lovely. I can tell this book of yours is going to be a family heirloom- it’s a treasure!
